I'd like to cook my girlfriend a romantic meal for Valentine's day, but I'm not the best cook. Do you have an easy dish I could try that will still look very impressive?

The most romantic meal that I ever had was a bottle of fizz and some fish and chips - eaten on Valentine's Day on a cold beach! Not everyone's cup of tea and it was a bit chilly! So, I suggest you really keep it very simple and do one of my 'one pot wonders'. It is a chicken dish with the flavours of tarragon and orange in a light creamy sauce and served with some crushed new potatoes, peas and mint, and is just perfect for a romantic night in. Hope it goes well!
1 medium onion - finely chopped
1oz (25g) butter
2large boneless chicken breasts - skin removed
½ bunch of fresh tarragon
Grated zest and juice of ½ orange
2floz (55ml) rose wine
3 tablespoons of creme fraiche
Salt and pepper
To garnish - Grated orange zest and fresh tarragon
1. Place your chopped onion in a large sauté pan with the butter and cook gently for 10 minutes without colouring.
2. Now add the chicken breasts, sprinkle over the roughly chopped tarragon, orange zest and juice and then the wine. Bring up to the boil and then reduce to a simmer. Put on the lid and cook for 25 minutes or until the chicken is cooked through and firm. Cook gently though, so the chicken remains tender.
3. Now remove the chicken and keep warm. Bring the heat up and boil the sauce. Add the creme fraiche and season. Pour over your chicken breasts and serve.
4. Sprinkle over a little more tarragon, and orange zest and serve….with….
MINTED MASH WITH PEAS
1 lbs (450g) of new potatoes
3oz (75g) fresh or frozen peas
2floz (55ml) double cream
1oz (25g) butter
1 bunch of fresh mint
Salt and pepper
1. Wash the potatoes, but leave the skins on. Put into a large saucepan, with a little salt and water. Cook until quite tender.
2. About 5 minutes before the end of cooking the potatoes, pop in the peas. Drain both.
3. Heat the milk and cream up. Lightly mash the potatoes and peas, season ad then add the butter. Stir in enough of the cream and milk to soak in, but not too much as to make it sloppy. Stir in the mint and serve.
The mint must be added just before serving as it goes black very quickly.
