I always cook rice for too long and it goes all sticky. Please tell me there's a fool proof method?

A

Cooking too long isn't the only reason your rice is sticky - it's probably because you have too much water and you're stirring the rice during cooking. This agitates the grains (rather like when you cook a risotto) and splits them releasing the starch and making the rice glutinous. My tried and tested way is to measure your rice by volume and then double the water. For example if you have measured ¼ pint (150ml) of basmati rice ( my favourite), add ½ pint (275ml) of boiling water. Then place over a gentle heat, with the lid on and let it steam for 15 minutes. By the end of that time, the grains will have soaked up the water and if you haven't stirred it, the rice will be free from stickiness. Strain into a colander, rinse quickly with a little boiling water and then strain again and serve. Voila! No more sticky rice.
